Benny Profane works as the salad man at Schlotzhauer's Trocadero Restaurant. The cook, Da Conho, is a "mad Brazilian who wanted to go fight Arabs in Israel" p.22. Da Conho later loses his cherished machine gun and goes even more nuts. Benny meets Rachel out back over dropped lettuce.
